Delish!

The other day I was craving a portabello mushroom sandwich from one of my favorite places, but alas, we were without date night money or a sitter. What's a gal to do? Recreate! It was so good!!! Although it didn't win any praise from Goofball or Sweetpea, Gary and I loved it. So much in fact, we had them again for lunch today. Paired with baked sweet potato fries, so good and fairly guilt free.
So ignore the poorly lit, and slightly blurry photo. Super simple: lightly sear/sautee portabello mushroom slices (or the whole head), use the rolls of your choice, top with fresh spinach leaves and Green Goddess dressing (found with the salad dressings at the grocery store). Shake slices of sweet potato with olive oil to coat lightly, dust with about 1 teaspoon salt/pepper, bake at 450 degrees for 20 minutes, then broil for 2-4 minutes to crisp up. So tasty!
